On 20 December, Cinalli will join the restaurant’s resident Chef de Cuisine, Ahmed Jameel, for an immersive cocktail-led evening highlighted by a one-night-only five-course anniversary menu, designed to showcase the restaurant’s distinctive blend of Japanese precision and Mediterranean soul.

The anniversary event brings together two creative talents at the height of their craft. Originally from Lanciano, a small fishing town in Italy, Luca Cinalli is globally acclaimed for his work with The World’s 50 Best Bars, including renowned London venues such as Nightjar and Oriole. With more than 20 years of experience in hospitality, food and beverage, and bar innovation, Cinalli is known for his inventive, layered flavour profiles and theatrical approach to cocktail-making. At TAPASAKE Maldives, he will collaborate closely with Chef Ahmed Jameel, a Maldivian native whose culinary style skilfully balances traditional and contemporary Japanese techniques while drawing inspiration from the oceanic surroundings and the resort’s cosmopolitan clientele.
Set against the soothing vistas of the azure Indian Ocean, the evening’s centrepiece will be an exclusive cocktail pairing experience, where Cinalli and the TAPASAKE team will present a series of signature creations crafted to complement the five-course anniversary menu. Dishes such as Black Cod Medallion and Sakura Tea-Smoked Wagyu Short Rib will be elevated by cocktails that draw inspiration from TAPASAKE’s diverse culinary influences, its sleek overwater architecture, and the golden sunsets that frame the restaurant each evening. Creations like Wave Kiss evoke the sensation of watching waves break over the reef, reinterpreted as an umami-rich liquid foam, while TAPASAKE Chocolate blends sake chocolate liqueur and pistachio to bridge the distinctive yet harmonious palates of Japan, the Mediterranean, and the Maldives.
