Named after the caravel, the agile Portuguese sailing vessel that enabled major voyages between the 14th and 17th centuries, Caravela presents a narrative-led dining experience where every course is designed to represent a chapter in the story of exploration, trade and cultural exchange. The concept blends Spanish culinary influence with locally sourced Maldivian ingredients, creating a menu that is both globally inspired and rooted in island provenance. Designed as an intimate, dinner-only offering for up to 12 guests, Caravela centres around a communal table intended to encourage connection, conversation and shared discovery. Its inaugural menu, titled The Atlantic Voyage of 1487, follows the route of early explorers who departed from Iberia and journeyed along the African coastline toward the Cape of Storms in search of a sea passage to India. The menu has been carefully structured to evoke the progression of that historic voyage, transforming the evening into a sensory experience that extends beyond dining and into a broader appreciation of the cultural encounters that shaped modern gastronomy.
The five-course tasting journey begins with First Light of the Atlantic, featuring crispy King Crab fritters served with ikura and a lime-yuzu vinaigrette, setting a bright and elegant tone for the evening. It continues with Winds of the Cantabrian Sea, a torched Maldivian tuna loin complemented by escabeche and subtle Moroccan spices, highlighting the harmony between local seafood and flavours influenced by old trading routes. The third course, Crossing the Madeira Currents, presents local job fish paired with confit plantain purée and a prawn coral tuile, offering a sophisticated expression of coastal ingredients and culinary technique.
A green apple sorbet inspired by the Wambugu apples of western Africa serves as a palate cleanser, introducing a refreshing interlude before the main course, Benguela Shores at Dusk. This signature dish features 12-hour sous vide pork belly glazed with smoky chilli and finished with Spanish chorizo jus, creating a rich and deeply layered flavour profile. The culinary voyage concludes with Triumphant Return to Iberian Coast, an olive oil cake accompanied by port wine and blood orange gel, encased in a sugar sphere inspired by the Armillary Sphere, an enduring symbol of Portuguese navigation. Petit fours of caramelised torrija, coffee chocolate bonbon and South African milk tart round off the evening, while also hinting at the next chapter in the broader Caravela story.
Caravela has been conceived as an evolving culinary series, with future menus set to include The Pacific Voyage of 1492 and The Indian Ocean Voyage of 1498. Each forthcoming edition will introduce its own distinct flavour map and historical narrative, encouraging returning guests to explore how different regions, ingredients and cultural exchanges have contributed to the development of contemporary cuisine.
