Designed for guests with an appreciation for fine cuisine and creative presentation, Around the World in 8 Courses brings together globally inspired flavours through a specially developed menu served across Café Umi, Fish Market, The Lighthouse and the resort’s exclusive Dining by Design private dining concept on Lighthouse Beach.
Rather than remaining at a single restaurant throughout the evening, guests progress from one destination to another as each stage of the menu is presented. The format enables visitors to experience the distinctive atmosphere, culinary identity and setting of several venues during a single evening, combining fine dining with the natural surroundings and hospitality experience for which the Maldives is internationally recognised.
The culinary journey begins at Café Umi with an assortment of amuse-bouches. Among the selections are Spanner Crab & Ikura, prepared with yuzu gel, avocado purée, nori crisp and gold leaf, alongside Japanese Hamachi & Oscietra Caviar complemented by ponzu gel and shiso. The opening courses introduce guests to the international influences that continue throughout the evening, combining premium ingredients with contemporary culinary techniques and refined presentation.
Guests then continue to Fish Market, where the experience places particular emphasis on seafood and flavours influenced by the wider Indian Ocean and Asian region. Appetiser choices include Maldivian Lobster Laksa, combining locally sourced lobster and pan-seared scallops with an aromatic coconut broth, rice noodles, kaffir lime and Thai basil.
Another selection is the Mud Crab & Green Mango Salad, bringing together Sri Lankan mud crab, pomelo and coconut with a chilli-lime dressing. The menu highlights both regional produce and international culinary influences, giving guests an opportunity to experience familiar ingredients presented through contemporary interpretations.
For the main course, the journey continues to The Lighthouse, the resort’s signature award-winning restaurant. Guests can select Wagyu Striploin accompanied by truffle mashed potato, confit shallots, garlic asparagus and Jerusalem artichoke chips, presenting a sophisticated combination of premium ingredients and classic culinary techniques.
Another main-course option is Charred Spanish Octopus served on saffron risotto with piquillo pepper purée and chorizo oil. Together, the selections demonstrate the international character of the dining experience while enabling The Lighthouse to serve as one of the centrepieces of the evening.
The final dining stage takes guests to Lighthouse Beach, where the resort’s Dining by Design concept provides an intimate outdoor setting for dessert. Among the featured creations is the Coconut & Madagascar Vanilla Sphere, prepared with Madagascar vanilla mousse, coconut crémeux, passion fruit, mango and pandan chocolates.
