The Westin Maldives Miriandhoo Resort has announced the appointment of Alberto Burgio as Executive Chef, strengthening the resort’s culinary leadership as it continues to elevate dining experiences for international travellers seeking both indulgence and wellbeing in the Maldives. With more than a decade of progressive experience spanning luxury hotels, fine dining and high-volume restaurant operations across the UAE, the UK and Italy, Chef Alberto brings a well-rounded, globally informed perspective to the resort’s food and beverage direction, combining creativity with the operational discipline needed to deliver consistent quality at the highest standards.

In his new role, Chef Alberto will lead the culinary strategy and day-to-day operations across the resort’s three signature restaurants, each designed to offer guests distinct experiences throughout their stay. Island Kitchen, the resort’s all-day dining venue, will continue to serve as the central hub for relaxed yet polished dining, offering carefully curated menus suited to both energising breakfasts and leisurely dinners in a tropical setting. Hawker, inspired by street-food culture, provides a vibrant, flavour-forward alternative that reflects the resort’s commitment to variety and authenticity, catering to guests who enjoy casual dining with personality and bold taste. The Pearl, the resort’s elevated Japanese specialty restaurant, stands as a refined culinary highlight, an experience shaped by precision, technique and the artistry of Japanese flavours, presented with an emphasis on elegance and memorable presentation. Beyond these venues, Chef Alberto will also oversee bespoke destination dining experiences, enabling guests to enjoy private, tailor-made culinary moments that complement the resort’s tranquil natural environment and premium hospitality.

Originally from Sicily, Italy, Chef Alberto has developed a career defined by leadership across multicultural teams, the creation of innovative menus, and the delivery of refined dining experiences while maintaining cost control and operational efficiency. Most recently, he served as Executive Chef at Amwaj Rotana JBR in Dubai, where he oversaw culinary operations across seven outlets and played a role in securing Green Key certification from Dubai Sustainable Tourism. This experience aligns closely with The Westin Maldives Miriandhoo Resort’s focus on sustainability and responsible hospitality, reinforcing the resort’s wider commitment to thoughtful operations that support the destination and its environment while maintaining a premium guest experience.

Chef Alberto is drawn to the culinary profession for its pace, precision and the responsibility of consistently delivering guest satisfaction, and he is known for thriving in environments that value continuous improvement, creativity and high performance. This appointment marks his first role in the Maldives, and he arrives with strong enthusiasm for engaging with the destination’s natural surroundings and contributing directly to the full guest journey, an approach that reflects the resort’s emphasis on immersive experiences. Outside the kitchen, he is an avid football enthusiast who enjoys following the sport, bringing an additional personal touch to his profile as he joins the resort’s leadership team.
